charred sweet corn peach salad

At The Store

  • 5 ripe peaches, sliced

  • 4 sweet corn cobs, charred and sliced of the cob

  • 1 bunch of cilantro, roughly chopped

  • 1/2 red onion, diced

  • 1 jalapeño, de-seeded and diced

  • 1/2 lime, juiced

  • Salt + pepper to taste

  • Drizzle of olive oil

In The Kitchen

  • Prep your ingredients: slice the peaches, char + cut corn, chop cilantro, jalapeño, and onion. Combine everything in a large bowl.

  • Juice lime over mixture and add a pinch of salt + pepper and drizzle with olive oil. Taste and adjust seasoning as needed.

  • Serve and enjoy!

Swap It Out

  • This would be delicious with any summer fruit: blueberries, apricots, or cherries. If cilantro tastes like soap to you, swap out with parsley for added greens and freshness!
